Thai-inspired seitan and spinach in a rich peanut sauce, perfect with rice.
Ingredients:
  • 2 teaspoons chopped fresh ginger
  • 3 cloves garlic, chopped
  • 1 teaspoon red curry paste
  • 1 (15 ounce) can coconut milk, divided
  • 1 (16 ounce) package chicken-style seitan, cut into strips or cubes
  • 3 tablespoons smooth peanut butter
  • 3 tablespoons white sugar
  • 1 tablespoon vegetable oil
  • 1 teaspoon tamari or soy sauce
  • 0.5 teaspoon chili garlic sauce
  • 0.5 teaspoon vegetarian oyster sauce
  • 0.5 sweet onion, chopped
  • 1 bunch fresh spinach, chopped
  • 4 green onions, chopped
Instructions:
  • Mix the ginger, garlic, and curry paste in a small bowl. Gradually blend in 1/4 cup of coconut milk until smooth. Gently coat the seitan with the marinade. Refrigerate for 30 minutes to 1 hour for optimal flavor infusion.
  • Combine the remaining coconut milk, peanut butter, sugar, vegetable oil, tamari, chili garlic sauce, and oyster sauce in a medium bowl. It's okay if it's not fully mixed yet; the flavors will come together beautifully when cooked. Set the sauce aside.
  • Coat a large skillet with cooking spray, then sauté chopped onion over high heat until tender, about 3 to 4 minutes. Add seitan and cook until heated through, approximately 7 minutes. Pour in the sauce and mix well. Stir in spinach and green onions, and cook for another 3 minutes until the sauce thickens and the spinach is cooked.
