Spicy vegetarian fajitas with seitan, bell peppers, onion, and garlic - a delicious meat-free twist on a classic dish.
Ingredients:
  • 3 tablespoons olive oil
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 0.5 red onion, chopped
  • 1 pound seitan, cut into strips
  • 2 tablespoons reduced-sodium soy sauce
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 10 whole grain tortillas
Instructions:
  • In a large skillet over medium heat, sauté bell peppers and onion in olive oil until tender, about 3 to 5 minutes. Add seitan, soy sauce, garlic, chili powder, paprika, and cumin. Cook and stir until seitan is heated through, about 7 to 10 minutes.
  • Scoop seitan filling onto the center of each tortilla and wrap tortilla around the filling.
