Spicy, dense vegan pepperoni slices perfect for pizza or sandwiches.
Ingredients:
  • 1.5 cups vital wheat gluten flour
  • 0.25 cup nutritional yeast
  • 2 teaspoons mustard powder
  • 2 teaspoons paprika
  • 1.5 teaspoons crushed fennel seeds
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper
  • 0.5 teaspoon crushed anise seeds
  • 0.5 teaspoon white sugar
  • 0.75 cup cold water
  • 0.25 cup tomato paste
  • 2 tablespoons olive oil
  • 2 tablespoons liquid amino acid (such as Bragg®)
  • 2 teaspoons liquid smoke flavoring
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect bake!
  • Combine vital wheat gluten flour, nutritional yeast, mustard powder, paprika, fennel seeds, salt, black pepper, garlic powder, cayenne pepper, anise seeds, and sugar in a large mixing bowl.
  • Combine water, tomato paste, olive oil, liquid amino acid, and liquid smoke in a separate bowl. Mix this wet mixture into the flour mixture until a dough forms, ensuring everything is evenly combined.
  • Transfer dough to work surface and knead until smooth. Shape into a 1 1/2- to 2-inch diameter log. Wrap tightly in aluminum foil, twisting both ends. Place on baking sheet.
  • Bake in the preheated oven for 90 minutes, then unwrap and cool at room temperature for about 30 minutes.
  • Slice the chilled pepperoni to your preference for use. Keep it fresh in the refrigerator, either in an airtight container or wrapped with plastic wrap.
