Make tasty vegan seitan for sandwiches or stir-fries with this simple recipe using wheat-based meat substitute.
Ingredients:
  • 1 cup vital wheat gluten
  • 4.5 cups vegetable broth, divided
  • 0.25 cup liquid aminos (such as Bragg®)
  • 3 tablespoons nutritional yeast
  • 1 tablespoon olive oil
  • 1.5 teaspoons minced garlic
  • 4 cups water
  • 0.25 cup tamari
Instructions:
  • Combine wheat gluten, 1/2 cup broth, liquid aminos, nutritional yeast, oil, and garlic in a bowl, stirring until a cohesive ball forms. Knead the dough until it becomes rubbery. Divide into 3 equal parts and shape each into 1/2-inch-thick patties.
  • In a large pot, mix together the remaining 4 cups of vegetable broth, water, and tamari. Bring to a boil. Gently place the patties into the boiling broth, cover the pot, and return to a boil. Leave the lid slightly ajar to release steam and lower the heat to a simmer. Keep simmering, flipping occasionally, until the patties are firm, about 1 hour.
  • Remove the pot from the heat and uncover. Let the patties cool in the flavorful broth for 15 minutes before serving.
