Serbian-style crepes filled with tasty options like cheese, jam, or nuts before being rolled up.
Ingredients:
  • 1.5 cups all-purpose flour
  • 2 tablespoons white sugar
  • 4 large egg whites
  • 3 cups milk
  • 4 large egg yolks
  • 3 tablespoons vegetable oil
  • 2 teaspoons vanilla extract
  • 1 tablespoon butter for the pan, or more as needed
Instructions:
  • Combine flour, sugar, and salt by sifting into a bowl.
  • Whip egg whites in a glass, metal, or ceramic bowl until stiff peaks form. Let it rest.
  • Combine milk, egg yolks, oil, and vanilla extract in a large bowl. Gradually whisk in the flour mixture until fully incorporated. Gently fold in the egg whites using a spatula.
  • Melt a small piece of butter in a skillet over medium heat. Pour a small amount of batter into the skillet, swirling to cover the bottom. Cook until lightly browned on one side for 2 to 3 minutes. Flip the pancake and cook the other side for an additional 1 to 2 minutes. Repeat the process, adding a new small piece of butter before each pancake.
