Savory chicken, crunchy sesame seeds, fresh spinach, and green onions tossed in a tangy soy-vinegar dressing for a delicious picnic pasta salad.
Ingredients:
  • 1 (12 ounce) package radiatore pasta
  • 0.25 cup sesame seeds
  • 0.25 cup salad oil
  • 0.75 cup soy sauce
  • 0.5 cup white wine vinegar
  • 3.5 tablespoons sugar
  • 2 cups cubed, cooked chicken
  • 0.5 cup chopped fresh parsley
  • 0.5 cup coarsely chopped green onion
  • 4 cups torn fresh spinach leaves
Instructions:
  • 1. Boil a large pot of lightly salted water until it bubbles. Add the pasta and cook for 8 to 10 minutes, or until it is al dente. Drain the pasta before serving.
  • Heat oil in a small skillet on medium-low until shimmering. Add sesame seeds and cook until beautifully golden. Remove from heat, then fold in soy sauce, vinegar, and sugar. Transfer the dressing to a sealable container and let it sit for later.
  • Combine pasta, cooked chicken, and 1 cup dressing in a large bowl. Refrigerate the salad for at least 6 hours, keeping the remaining dressing aside.
  • Just before serving, mix in fresh parsley, green onions, and spinach. Combine with the remaining dressing to enhance flavors, if you like.
