Sesame Chicken with Broccoli

Savory sesame chicken stir-fry with sweet kick, overflowing with crisp broccoli.
Ingredients:
  • 1 1/2 pounds boneless, skinless chicken breast, cut into 1-inch pieces
  • 2 teaspoons cornstarch
  • 1 teaspoon salt, or to taste
  • 1/4 teaspoon white pepper, or to taste
  • 2 teaspoons minced fresh garlic
  • 2 teaspoons minced fresh ginger
  • 1/4 cup plus 1 teaspoon cooking oil of choice, divided use
  • 1/3 cup soy sauce
  • 1/3 cup hoisin sauce
  • 1/3 cup rice vinegar
  • 1 teaspoon sambal oelek, or to taste
  • 2 Tablespoons sesame oil
  • 1/2 cup julienne cut carrots
  • 1/2 cup sliced shallots
  • 4 cups fresh broccoli florets
  • 1 Tablespoon cornstarch
  • 1 Tablespoon soy sauce
  • 1 Tablespoon sesame seeds, or to taste
Instructions:
  • In a bowl, coat chicken pieces evenly with cornstarch, salt, and white pepper. Set aside.
  • In a small nonstick skillet over medium heat, heat 1 teaspoon of cooking oil. Stir in garlic and ginger and cook until fragrant, around 1 minute.
  • Combine soy sauce, hoisin sauce, rice vinegar, sambal oelek, and sesame oil in the pan. Bring to a boil and cook while stirring for about 1 minute. Remove from heat and set aside.
  • In a large nonstick skillet or wok, heat 2 tablespoons of oil over medium-high heat until very hot. Carefully add chicken pieces and cook, stirring occasionally, until lightly browned on all sides, about 8 to 10 minutes. Be cautious of spattering and use a long-handled spoon to move the chicken around.
  • Remove the chicken with a slotted spoon from the skillet. Add the remaining 2 tablespoons of cooking oil, then quickly and continually stir in the carrots, shallots, and broccoli for 3 to 4 minutes.
  • Add the sauce you prepared and cook until the vegetables reach your desired level of tenderness, which should take 2 to 3 minutes.
  • In a small bowl, combine cornstarch with 1 tablespoon of soy sauce until smooth. Pour the cornstarch slurry into the skillet and stir vigorously to incorporate. Add chicken back to the skillet and cook, stirring frequently, until warmed through, for about 2 to 3 minutes.
  • Sprinkle the dish with sesame seeds and serve hot.
