Sesame fried eggs

Ingredients:
  • 2 springs onions
  • 1 -2 fresh mixed-colour chillies
  • 2 heaped tablespoons mixed sesame seeds
  • 4 large eggs
  • 2 tablespoons hoisin sauce
Instructions:
  • Prepare the spring onions and chillies by slicing them very finely and placing them in a bowl of ice-cold water with a splash of red wine vinegar. Toast sesame seeds in a non-stick frying pan for 1 minute over medium-high heat. Drizzle olive oil into the pan, crack the eggs, cover them, and cook to your desired doneness. Serve the eggs on plates, drizzle hoisin sauce over them from a height, sprinkle with spring onions and chillies, gently pierce the yolks, and savor the dish.
