Prepare a large batch of flavorful cold nutty soy noodles for a convenient and delicious make-ahead lunch option that lasts for days.
Ingredients:
  • 8 ounces dry soba, rice, or egg noodles
  • 2 tablespoons toasted sesame oil, divided
  • 3 tablespoons natural peanut butter
  • 1/4 cup soy sauce
  • 1 1/2 tablespoons honey
  • 1 1/2 tablespoons rice vinegar
  • 1 clove garlic, grated
  • 1 tablespoon toasted sesame seeds, for garnish (optional)
  • 1 green onion, sliced, for garnish (optional)
Instructions:
  • Prepare the noodles: Boil a large pot of water. Cook noodles according to package instructions. Drain in a colander, rinse under cold water until cool, then toss in 1 tablespoon of sesame oil to prevent sticking. Refrigerate in a bowl, covered with plastic wrap, while you make the sauce.
  • Make the sauce: Combine 1 tablespoon sesame oil, peanut butter, soy sauce, honey, rice vinegar, and garlic in a small bowl. Whisk until smooth.
  • Prepare the noodles by generously coating them with the flavorful peanut sesame sauce before mixing in, then sprinkle with sesame seeds and green onions for added freshness. Store any remaining noodles in the refrigerator in a sealed container for freshness, and when ready to enjoy again, simply refresh the dish by mixing in a small amount of warm water to loosen the sauce.
