Master the art of quick high-heat stir-frying for delicious and fragrant Asian dishes. Just sizzle, shake, and stir for an unforgettable meal.
Ingredients:
  • 18.20 gm peanut oil
  • 600g pork fillet, thinly sliced
  • 2 tsp sesame oil
  • 1 bunch spring onions, trimmed, bulbs cut into wedges
  • 2 garlic cloves, thinly sliced
  • 1/2 tsp Chinese five-spice
  • 1/2 tsp Sichuan peppercorns, lightly crushed
  • 125ml oyster sauce
  • 40.00 ml shaoxing wine or dry sherry
  • 1 bunch Chinese broccoli, chopped
  • 1 bunch baby bok choy, sliced lengthways
  • Hokkien noodles, to serve
  • Toasted sesame seeds, to serve (see note)
Instructions:
  • In a sizzling wok, cook pork in batches with hot oil until browned, transferring each batch to a bowl before adding more.
  • In a sizzling hot wok, infuse the sesame oil and toss in the vibrant spring onions, pungent garlic, aromatic Chinese five-spice, and tingly Sichuan pepper. Stir-fry for a minute until the enticing aroma fills the air. Next, introduce the pork, oyster sauce, wine, broccoli, and bok choy and continue to stir-fry for 2 minutes until everything is heated through and the bok choy gently wilts.
  • Cook hokkien noodles according to packet instructions. Drain thoroughly and divide into serving bowls. Add stir-fry on top and finish with a sprinkle of sesame seeds. Serve right away.
