Sesame puffed rice bars

Whip up nutritious puffed rice bars for a lunchbox treat.
Ingredients:
  • 225.00 gm tahini
  • 268.13 gm honey
  • 1000.00 ml puffed rice
  • 375.00 ml sunflower seeds
  • 375.00 ml pepitas
  • 75.00 gm sesame seeds
Instructions:
  • Prepare a 20cm x 30cm lamington pan by generously greasing it and lining the base and sides with baking paper, making sure the paper extends 5cm above the edges of the pan.
  • In a small saucepan, gently heat tahini and honey until the honey is melted and the mixture is smooth, stirring occasionally for about 3 minutes.
  • In a bowl, mix puffed rice, sunflower seeds, pepitas, and sesame seeds. Pour in the tahini mixture and swiftly stir until well combined. Transfer the mixture into the prepared pan and press it down firmly with the back of a spoon to even it out. Chill in the refrigerator overnight or until firm.
  • Slice into 20 delicious bars and chill in the refrigerator until ready to enjoy.
