Sesame pumpkin wontons

Spiced pumpkin wontons, simple homemade recipe.
Ingredients:
  • 500g butternut pumpkin, peeled, diced
  • 1 tsp sesame oil
  • 1 green onion, finely chopped
  • 62.50 ml drained water chestnuts, finely chopped
  • 2 tsp finely grated fresh ginger
  • 12 gow gee wrappers (see note)
  • 65.63 gm reduced-salt soy sauce, to serve
Instructions:
  • Preheat your oven to 200ºC. Prepare a baking tray with parchment paper. Spread the pumpkin on the tray, drizzle with oil, season with pepper, and toss to coat. Roast for 25 minutes until tender. Let it cool before serving.
  • Mix together the pumpkin, onion, water chestnuts, and ginger in a bowl. Put a wrapper on a flat surface, brush lightly with water. Add 3 teaspoonfuls of the pumpkin mixture on top. Fold it in half and seal by pinching. Repeat with the rest of the wrappers and pumpkin mixture.
  • Cut slits in non-stick baking paper to line the steaming basket. Place wontons on paper without touching. Steam over simmering water in a wok for 25 minutes.
  • Enjoy these delicious wontons with a side of flavorful soy sauce for dipping.
