Quick and delicious sesame soba noodles - ready in under 15 minutes! Perfect for a flavorful lunchbox option.
Ingredients:
  • For the noodles
  • 9 ounces dry soba noodles (see recipe note)
  • 1/4 cup toasted sesame oil
  • 3 tablespoons soy sauce
  • 2 tablespoons maple syrup or sugar
  • 2 tablespoons fresh lemon juice or rice vinegar
  • 1 tablespoon toasted sesame seeds (black or white)
  • 2 green onions, roots trimmed and finely chopped
  • 1 clove garlic, grated with a Microplane
  • 1/4 teaspoon freshly ground black pepper
  • Optional toppings
  • Thinly sliced radishes
  • Chopped cilantro
  • Any type of micro greens
Instructions:
  • Cook the soba noodles: Fill a large pot with 3 quarts of water and bring to a boil. Add the soba noodles and cook for 4 minutes, stirring frequently. Drain the noodles in a colander and rinse with cold water until cool to the touch. Let them drain in the sink.
  • Prepare the dressing by combining sesame oil, soy sauce, maple syrup, lemon juice, sesame seeds, green onions, garlic, and black pepper in a large bowl. Whisk vigorously until well combined.
  • After draining, vigorously tap the colander in the sink to remove excess water. Add the noodles to the dressing, then use a fork to evenly coat them. Serve at room temperature or chilled, refrigerating any leftovers for up to 3 days for optimal flavor. Avoid freezing. Enjoy the enhanced taste as the flavors meld together over time.
