Seven-Up Sheet Cake

Quick and delicious cake made with a simple cake mix base and topped with a delightful topping. Ready to enjoy in under 2 hours!
Ingredients:
  • 1 (18.25 ounce) package yellow cake mix
  • 1 (3.5 ounce) package instant vanilla pudding mix
  • 4 eggs
  • 0.75 cup vegetable oil
  • 1.25 cups lemon-lime flavored carbonated beverage
  • 1.5 cups white sugar
  • 2 tablespoons all-purpose flour
  • 0.5 cup butter
  • 1 (20 ounce) can crushed pineapple with juice
  • 1 (3.5 ounce) package flaked coconut
Instructions:
  • Prepare a 9 x 13 pan by greasing it, then preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine cake mix, pudding mix, slightly beaten eggs, and vegetable oil. Beat on medium speed until batter is light and fluffy, then mix in 7-UP until well combined. Pour batter into prepared pan.
  • Bake the cake for 35 to 40 minutes until it's cooked through. Use this time to prepare the topping, which only takes about 15 minutes.
  • Combine sugar and flour in a medium non-aluminum saucepan. Add 2 eggs, butter or margarine, and pineapple. Cook over low heat, stirring constantly until thickened. Remove from heat and stir in coconut. Spread the topping over the warm cake.
