Shortcut Potato Onion Perogies

Make tasty perogies from scratch with an easy potato and onion filling and simple dough.
Ingredients:
  • 3 cups all-purpose flour
  • 2 tablespoons butter
  • 0.66666668653488 cup water
  • 1 tablespoon extra virgin olive oil
  • 1 small yellow onion, diced
  • 1 (7.6 ounce) package instant mashed potato flakes
Instructions:
  • Combine flour and salt in a medium bowl. Use a fork to incorporate butter until small pieces form. Add water and mix well. Adjust consistency by adding more flour if needed until dough is workable. Knead for 2-3 minutes on a floured surface. Cover and let rest for 10-15 minutes.
  • Roll out the dough on a lightly floured surface to a 1/4 inch thickness, then cut into circles using a cookie cutter or large glass. Set aside as you get the filling ready.
  • Prepare mashed potato flakes following package instructions. Heat olive oil in a skillet over medium heat, then sauté onions until soft and transparent. Remove from heat and combine with the mashed potatoes.
  • Spoon a generous tablespoon of pierogi filling onto each dough circle. Seal tightly by folding over and pinching the edges to prevent any filling from escaping during boiling. Optional: freeze at this stage if desired.
  • - Bring a large pot of water to a boil. - Gently add perogies and cook until they float to the top. - Repeat with remaining perogies. - For extra flavor, consider pan-frying in butter and onions before serving.
