Shortcut Sausage-Stuffed Manicotti with Sun-Dried Tomato Sauce

Effortlessly assemble Italian sausage and noodles for a quick oven-ready meal in just 20 minutes.
Ingredients:
  • 1 jar (26 oz) sun-dried tomato pasta sauce
  • 1/2 cup water
  • 1 1/2 lb uncooked Italian sausage links (7 links)
  • 14 uncooked manicotti pasta shells (8 oz)
  • 2 cups shredded mozzarella cheese (8 oz)
  • 1/4 cup shredded Parmesan cheese (1 oz)
Instructions:
  • Preheat oven to 350°F. Grease a 13x9-inch (3-quart) glass baking dish with cooking spray, then evenly spread 1 cup of the pasta sauce in the dish. In the remaining sauce in the jar, add water and mix thoroughly.
  • Slice the sausage links in half lengthwise and remove the casings. Shape each piece of sausage into a roll and stuff it into an uncooked pasta shell. Arrange the stuffed shells on top of the sauce in the dish and pour the rest of the pasta sauce mixture over them.
  • Cover the dish tightly with foil and bake for 1 hour and 20 minutes. Sprinkle the top with mozzarella and Parmesan cheeses and continue baking uncovered for 10 minutes or until the cheeses are melted and the pasta is tender. Allow it to stand for 10 minutes before serving.
