Whip up a speedy shrimp and mushroom stir fry for a quick and nutritious weeknight dinner option. Ready in minutes!
Ingredients:
  • 12 ounces cremini mushrooms, quartered or sliced
  • 1 pound large shrimp (31-35 per pound), peeled
  • 3 scallions, chopped
  • For the simple stir fry sauce
  • 1 1/2 cups chicken stock
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • Serving and garnish
  • Cooked white rice, to serve
  • Sesame seeds, for garnish
Instructions:
  • Prepare the flavorful stir fry sauce by combining chicken stock, garlic, soy sauce, and cornstarch in a small bowl, then set it aside.
  • In a large skillet or wok over medium heat, sauté mushrooms in olive oil until golden brown and soft, about 8 minutes.
  • Introduce the shrimp into the skillet: After achieving your desired level of doneness with the mushrooms, introduce the shrimp into the skillet. If the skillet seems parched, drizzle a bit of fresh oil to prevent the shrimp from sticking. Sauté the mixture, stirring continuously, until the shrimp are fully cooked and opaque, typically 2-3 minutes.
  • Complete the stir fry by adding the entire stir fry sauce to the skillet with the cooked shrimp. Stir well until the sauce lightly coats the ingredients, resembling a thin gravy. Adjust the sauce consistency by adding water if it thickens too much, or simmer for 1-2 minutes to thicken if it's too thin. Stir in the chopped scallions to finish.
