Simple and delicious Coq au Vin made with chicken breasts and veggies braised in red wine sauce - perfect for dinner parties.
Ingredients:
  • 3 tablespoons extra-virgin olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 cup milk
  • 2 pounds skinless, boneless chicken breast halves
  • 2 cups halved baby carrots
  • 1 (8 ounce) package button mushrooms, sliced
  • 1 onion, chopped
  • 2 cups red wine
  • 2 cups low-sodium chicken broth, or as needed
  • 2 teaspoons Italian seasoning
  • 0.5 teaspoon dried rosemary
  • salt and ground black pepper to taste
Instructions:
  • In a large pot over medium-high heat, warm olive oil. In a shallow bowl, combine flour, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Pour milk into a separate bowl. Coat chicken in milk, letting any extra milk drip off. Then, coat chicken evenly with the flour mixture.
  • Brown half of the chicken in the hot oil for 2 to 3 minutes per side. Transfer to a plate and brown the remaining chicken. Add all the chicken back to the pot.
  • Gently combine carrots, mushrooms, and onion with the chicken. Pour wine over the mixture, using a wooden spoon to deglaze the pot. Add chicken broth until ingredients are nearly covered.
  • Infuse the broth mixture with Italian seasoning, rosemary, salt, and pepper, then bring to a vigorous boil. Cover the pot, lower the heat, and let it simmer gently, stirring now and then, until the chicken is fully cooked, approximately 1 hour. Uncover, increase the heat to medium-high, and boil the sauce down, stirring occasionally, until it thickens nicely, around 15 minutes.
