Butter, brown sugar, and cinnamon add sweetness to baked spaghetti squash for a delicious veggie side dish.
Ingredients:
  • 1 (2 pound) spaghetti squash, halved and seeded
  • 0.5 cup butter, cut into 10 equal pieces
  • 0.25 cup brown sugar, divided
  • 2 tablespoons ground cinnamon, divided
Instructions:
  • Preheat your toaster oven to 350°F (175°C).
  • Lay spaghetti squash halves on a small baking sheet. Divide 5 pieces of butter evenly between each half. Sprinkle 2 tablespoons of brown sugar and 1 tablespoon of cinnamon on each half.
  • Roast in the warmed oven until tender, approximately 1 hour.
  • Retrieve the roasted squash from the oven and fluff up the insides by gently scraping them with a fork, creating a mound of delicate strands.
  • Place the dish back in the oven for an additional 10 minutes to elevate the flavors. Allow it to cool for about 10 minutes before serving.
