Irresistibly moist and soft lemon cake made with simple ingredients, perfect for summer picnics and parties.
Ingredients:
  • 0.5 cup butter
  • 1.5 cups all-purpose flour
  • 1.75 teaspoons baking powder
  • 0.75 cup milk
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9-inch square baking pan.
  • In a mixing bowl, cream together sugar and butter until light and fluffy using an electric mixer. Then mix in eggs and vanilla extract until well combined.
  • In a separate bowl, combine the sifted flour and baking powder. Gradually add this mixture to the creamed mixture until well incorporated.
  • Combine the milk, lemon zest, and lemon juice until smooth.
  • Transfer the batter into the pan that has been prepared.
  • Bake in the preheated oven for about 35 minutes, or until a toothpick inserted into the center comes out clean.
