Whip up a zesty Mexican coleslaw with minimal ingredients for a perfect BBQ or weeknight side dish.
Ingredients:
  • 6 cups very thinly sliced green cabbage
  • 1.5 cups grated carrots
  • 0.25 cup rice vinegar
  • 0.33333334326744 cup chopped cilantro
Instructions:
  • Rinse cabbage and carrots in cold water in a colander and allow to drain for 5 minutes.
  • In a large salad bowl, combine rice vinegar and olive oil, then add cilantro. Mix in the cabbage and carrots, and season with salt to taste.
  • Serve slaw immediately or refrigerate it covered for up to 1 day.
