Effortless Mexican quinoa with minimal ingredients, ideal for any meal or as a flavorful side.
Ingredients:
  • 2 cups water
  • 1 cup quinoa
  • 1 (12 ounce) package frozen corn and black bean vegetable blend (such as Archer Farms®)
Instructions:
  • In a saucepan, bring quinoa and water to a boil. Lower the heat to medium-low, cover, and simmer until the quinoa is tender and has absorbed all the water, which should take about 15 to 20 minutes.
  • Microwave the vegetable blend in a bowl for about 5 minutes until heated through. Stir the warm veggies into the fluffy quinoa.
