Effortless peas and onions - a versatile side dish for every meal.
Ingredients:
  • 1 pound shelled peas, fresh or frozen
  • 1/2 onion, chopped fine
  • 3 tablespoons butter
  • 1/2 cup chicken stock (use vegetable stock or just plain water for vegetarian version)
  • Black pepper
  • Salt
  • Pinch sugar (optional)
Instructions:
  • Caramelize the onions: Melt 2 tablespoons of butter in a sauté pan over medium-high heat. Add the chopped onions once the butter stops foaming. Cook until the onions start to brown, stirring occasionally.
  • Combine peas and stock in a pot and bring to a vigorous boil. Adjust seasoning as needed, considering the saltiness of the stock. For enhanced sweetness, sprinkle in a touch of sugar to accentuate the flavor of the peas.
  • Continue stirring the peas and onions frequently until the stock reduces by about half without overcooking the peas. Remove from heat and stir in the remaining butter and a generous amount of black pepper. Serve immediately, and optionally garnish with fresh mint.
