Tangy red leaf salad with dual vinegar dressing, customizable with extra veggies.
Ingredients:
  • 1 head red leaf lettuce
  • 1 red bell pepper, chopped
  • 1 stalk green onion, thinly sliced
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon balsamic vinegar
  • 0.5 teaspoon salt, or to taste
  • 0.25 teaspoon Dijon mustard, or more to taste
  • freshly ground black pepper to taste
Instructions:
  • Clean and dry red leaf lettuce in a salad spinner. Tear into bite-sized pieces and combine with bell pepper and scallion in a salad bowl.
  • In a resealable jar, mix olive oil, red wine vinegar, balsamic vinegar, lemon juice, salt, mustard, and pepper. Seal the jar and shake vigorously until fully mixed.
  • Drizzle desired amount of dressing over salad, toss to combine, and refrigerate any leftovers.
