Tender Swiss steak cooked in a Dutch oven with diced tomatoes and savory beef broth.
Ingredients:
  • 0.5 cup all-purpose flour
  • 0.5 teaspoon seasoned salt
  • 2 pounds London broil
  • 2 tablespoons olive oil
  • 2 (14.5 ounce) cans Italian-style diced tomatoes, undrained
  • 1 cup beef stock
  • 1 cup diced celery
  • 2 small onions, diced
  • 3 carrots, diced
  • 1 green bell pepper, diced
Instructions:
  • In a small bowl, mix together the flour, seasoned salt, and 1/2 teaspoon of pepper.
  • Place beef cubes on a cutting board. Sprinkle flour mixture over the beef and toss to coat evenly. Cover with plastic wrap and tenderize by gently pounding with a mallet or the back of a soup ladle.
  • In a large Dutch oven, heat oil over medium-high heat. Brown beef cubes for about 10 minutes, stirring occasionally. Season with salt and pepper. Add diced tomatoes (undrained), beef stock, celery, onions, carrots, and bell pepper. Mix thoroughly and bring to a boil.
  • Cover and simmer on low heat for 1 hour, remembering to stir occasionally. Crack the lid of the pot slightly (about 1/2 inch) to allow steam to escape. Let it simmer until beef is tender, roughly 1 more hour.
