Singapore chilli prawns

Enhance flavors by sautéing ginger and sauces first in quick stir-fry.
Ingredients:
  • 18.20 gm peanut oil
  • 2cm piece fresh ginger, finely grated
  • 400g can crushed tomatoes
  • 90.75 gm sweet chilli sauce
  • 600g medium green king prawns, peeled (tails intact), deveined
  • 800.00 gm steamed jasmine rice, to serve
Instructions:
  • Preheat a wok on medium-high heat. Drizzle oil and swirl to coat. Add ginger, tomato, sweet chilli sauce, and fish sauce. Stir-fry for 2 minutes until the sauce boils and thickens slightly.
  • Add succulent prawns and stir-fry until they turn a vibrant pink hue and are perfectly cooked. Serve alongside fluffy rice.
