Whip up delicious Singapore-style chilli prawn noodles in no time with a satisfying stir-fry.
Ingredients:
  • 300g egg noodles
  • 36.80 gm rice bran oil or sunflower oil, plus extra to drizzle
  • 20.00 gm cornflour
  • 80ml tomato sauce
  • 60ml soy sauce
  • 16.00 gm brown sugar
  • 6 garlic cloves, crushed
  • 20.00 ml finely grated ginger
  • 400g green prawns, peeled, deveined (tails intact)
  • 100g sweet chilli sauce
  • 21.00 gm lime juice, plus wedges to serve
  • 100g baby spinach leaves
  • 3 spring onions, shredded
  • 1/2 bunch coriander, leaves chopped
Instructions:
  • Prepare the noodles as directed on the package, then drain and lightly coat with oil.
  • In a bowl, mix cornflour with 2 tablespoons of water until dissolved. Add tomato sauce, soy sauce, sugar, and an additional 2/3 cup (165ml) water, and combine.
  • In a wok over medium-high heat, sauté garlic and ginger until fragrant, about 1 minute. Add prawns and cook until they turn pink, around 1-2 minutes. Stir in sweet chilli sauce, lime juice, and soy sauce mixture, and bring to a boil.
  • Combine the noodles and spinach in the pan, stir-frying for 2 minutes until the noodles are warmed through and the spinach is wilted. Serve with spring onion, coriander, and lime wedges.
