Savory steak with shiitake mushroom tarragon sauce, white wine, shallots, and butter. Perfect for a romantic dinner!
Ingredients:
  • 1 (12 ounce) sirloin steak
  • salt and freshly ground black pepper to taste
  • 2 tablespoons oil, or as needed
  • 0.33333334326744 cup shiitake mushrooms, stems discarded, caps thickly sliced
  • 0.5 shallot, sliced
  • 1 clove garlic, peeled
  • 0.33333334326744 cup dry white wine
  • 0.33333334326744 cup beef broth
  • 0.25 cup butter, cubed
  • 2 tablespoons chopped fresh tarragon
Instructions:
  • Season the steak generously with salt and pepper on all sides.
  • Preheat a heavy skillet over high heat until a drop of water sizzles and evaporates on contact. Add oil, then cook the steak until it's slightly firm and hot with a hint of pink in the center, approximately 4 minutes per side. Use an instant-read thermometer, ensuring it reads 140°F (60°C) when inserted into the center.
  • Take the steak out of the skillet and place it on a plate. Cover it loosely with foil to keep it warm. Dispose of the remaining oil in the skillet.
  • Lower the heat to medium-low and sauté the mushrooms, shallot, and garlic until softened, about 5 minutes, stirring often. Add white wine and simmer until slightly reduced. Pour in the beef broth. Reduce the heat to low and gradually stir in the butter, one cube at a time, mixing well after each addition. Add tarragon, salt, and pepper to taste. Pour the mushroom sauce over the steak and serve.
