Tender chicken thighs cooked with apples, apple cider, and cozy fall spices in a simple one-pan meal.
Ingredients:
  • 6 skinless, boneless chicken thighs
  • 6 slices bacon
  • 1 onion, sliced
  • 2 cups chicken broth, divided
  • 2 cups apple cider, divided
  • 2 apples - peeled, cored, and sliced
  • 4 sage leaves
  • 2 sprigs fresh thyme
  • 4 tablespoons butter
Instructions:
  • Season the chicken thighs with a sprinkle of salt and let them sit for a moment.
  • In a large skillet over medium heat, heat oil until shimmering. Add chicken and cook until golden brown on both sides, about 7 to 10 minutes. Transfer to a plate and rest.
  • Cook the bacon in a skillet over medium-high heat, turning occasionally, until evenly browned, for about 10 minutes. Then, drain the cooked bacon slices on paper towels and discard any excess grease from the skillet.
  • Sauté onion in the skillet until soft, around 5 to 7 minutes on medium heat. Pour in 1 cup chicken broth and 1 cup apple cider. Reduce by half, about 10 minutes. Stir in cooked bacon, apples, sage, and thyme; simmer for 2 minutes. Add the rest of the chicken broth and cider.
  • Add the chicken back to the pan, lower the heat to medium-low, and continue to cook and stir until the chicken thighs are fully cooked through, approximately 15 minutes.
  • Serve the chicken on a platter. Take the pan off the heat, add butter, swirl to mix with sauce, and pour over the chicken.
