Orange and pecan coffee cake baked in a skillet for a tasty afternoon treat.
Ingredients:
  • 2 cups self-rising flour
  • 0.25 cup shortening
  • 0.5 cup evaporated milk
  • 0.5 cup orange juice
  • 0.25 cup brown sugar, or more to taste
  • 0.5 stick butter, cut into small cubes
  • 0.5 cup pecan pieces
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and grease a generous 12-inch skillet.
  • Combine flour, white sugar, and salt in a bowl. Incorporate shortening. Stir in evaporated milk, orange juice, and egg. Gently fold the mixture.
  • Spread batter evenly in the skillet, generously sprinkle brown sugar, add small pieces of butter evenly across the top, and cover with pecan pieces for a delicious topping.
  • Bake in the oven until the coffeecake springs back when touched in the center, approximately 30 minutes.
