Skillet Meatloaf

Stovetop meatloaf cooked in rich tomato sauce and topped with gooey melted mozzarella cheese.
Ingredients:
  • 1 (10.75 ounce) can condensed tomato soup, divided
  • 1.5 pounds ground beef
  • 0.5 cup dry bread crumbs
  • 0.25 cup chopped onion
  • 1 teaspoon pepper
  • 0.25 cup water
  • 0.5 teaspoon prepared yellow mustard
Instructions:
  • Combine 1/4 cup of tomato soup, ground beef, bread crumbs, egg, onion, salt, and pepper in a large bowl, using your hands to mix well. Form the mixture into two loaves, pressing firmly.
  • Begin by heating a large deep skillet over medium-high heat. Brown the meatloaves until golden, then lower the heat to medium and cover with a lid. Allow the meatloaves to simmer for approximately 25 minutes until fully cooked.
  • Remove the fat from the skillet, then mix in the rest of the soup, water, and mustard. Sprinkle with mozzarella cheese and simmer uncovered for 10 minutes, stirring the sauce occasionally.
