Low-calorie potato mushroom soup, perfect for busy nights. Make it your own with different herbs and spices. Prep ahead for convenience.
Ingredients:
  • 2 slices bacon, chopped
  • 1 cup peeled and cubed potatoes
  • 0.33333334326744 cup chopped onion
  • 1 cup chopped assorted mushrooms
  • 1 teaspoon garlic powder
  • 1.5 cups water
  • 0.5 cup milk
  • 1 sprig fresh thyme
  • 1.5 tablespoons all-purpose flour
  • salt and coarsely ground black pepper to taste
Instructions:
  • Cook the bacon in a stockpot over medium heat until it's partially crispy, for about 5 minutes. Add potatoes and onion, sauté until the onion is translucent, around 5 minutes. Include mushrooms, garlic powder, and onion powder, cook until the mushrooms have softened, for another 5 minutes.
  • Gently combine water and milk with mushroom mixture, thyme, and flour in a pot, then bring to a boil. Simmer until potatoes are very soft, adding water as necessary, approximately 20 minutes. Use a wooden spoon to crush some potatoes for a creamier texture. Season generously with salt and pepper.
