Indulge guilt-free with a healthier mocha scone, perfect with your favorite hot beverage.
Ingredients:
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup sugar
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon instant espresso coffee powder or instant coffee crystals
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup butter, cut into pieces
  • 3/4 cup Yoplait® plain fat-free yogurt
  • 1 egg white, lightly beaten
  • 1/3 cup semisweet chocolate pieces
  • Rolled oats (optional)
Instructions:
  • Preheat your oven to a toasty 400°F, then get your baking sheet ready by giving it a light grease or lining it with parchment paper.
  • Mix together flour, 1/2 cup oats, sugar, cocoa powder, espresso powder, baking powder, and salt in a medium bowl. Add butter and blend with a pastry blender until mixture looks like coarse crumbs. Create a well in the middle of the mixture; set aside.
  • Combine creamy yogurt and a single egg white in a medium bowl. Gently fold in delectable chocolate pieces. Pour yogurt mixture into flour mixture all at once, stirring until just combined.
  • On a floured surface, knead the dough by folding and gently pressing for 10 to 12 strokes until nearly smooth. Shape it into an 8x6-inch rectangle. Cut into 4 strips, then chop each strip into 3 rectangles to make 12 pieces.
  • Arrange the dough pieces on a baking sheet, leaving a 1-inch space between each piece. Optional: sprinkle with more rolled oats. Bake for 13 to 15 minutes until the tops are firm. Transfer the scones from the baking sheet to a wire rack and let them cool for 5 minutes. Serve warm.
