Ingredients:
  • 1 cup gluten-free old-fashioned oats
  • 1/2 cup gluten-free oat flour
  • 1/2 cup brown rice flour
  • 2 tablespoons tapioca flour
  • 1 teaspoon gluten-free baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon pure vanilla
  • 1 cup miniature semisweet chocolate chips
  • 1/2 cup chopped walnuts
Instructions:
  • Combine oats, flours, baking powder, baking soda, and salt in a small bowl; set aside. In a large bowl, cream together butter, brown sugar, and granulated sugar until fluffy using an electric mixer. Mix in egg and vanilla. Slowly incorporate the oat mixture on low speed until just combined, then fold in chocolate chips and nuts.
  • Form the dough into a 16x1 1/2x1 1/2-inch log shape and wrap it in plastic wrap. Chill in the refrigerator for 1 hour or until it is firm.
  • Preheat oven to 350°F. Unwrap the dough and slice into 1/2-inch pieces using a serrated knife. Place slices 2 inches apart on an ungreased cookie sheet.
  • Bake for 9 to 11 minutes until edges turn golden. Let cool for 2 minutes, then transfer to a cooling rack.
