Family-friendly sloppy joes and cornbread, a guaranteed crowd-pleaser for dinner.
Ingredients:
  • 2 pouches (6.5 oz) Betty Crocker™ Cornbread & Muffin Mix
  • 2/3 cup 2% or whole milk
  • 1/4 cup butter, melted and cooled
  • 2 eggs
  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup chopped yellow onion
  • 1/2 cup chopped green bell pepper
  • 1 clove garlic, chopped
  • 3/4 cup ketchup
  • 1 tablespoon yellow or Dijon mustard
  • 2 tablespoons packed brown sugar
  • 1 cup shredded Cheddar cheese (4 oz)
  • 1 tablespoon chopped fresh chives
Instructions:
  • Preheat oven to 400°F and coat 12 muffin cups with cooking spray.
  • In a large bowl, combine the Corn Muffin ingredients until just moistened, leaving the batter slightly lumpy. Fill muffin cups halfway with the batter. Bake for 15 to 17 minutes until golden and a toothpick inserted into the center comes out clean. Allow to cool completely before serving.
  • In a 10-inch skillet, heat olive oil on medium-high heat. Cook beef for 5 to 7 minutes until browned, stirring often. Add salt, pepper, onion, bell pepper, and garlic; cook for about 5 minutes until onions are translucent. Mix in ketchup, mustard, and brown sugar.
  • Begin by slicing the cooled muffins and generously topping each one with about 1/3 cup of savory sloppy joe mixture, a sprinkle of cheese, and freshly chopped chives. Serve promptly for an irresistible treat.
