Slow cooked mushroom soup

Ingredients:
  • 40.00 gm butter
  • 750g mushrooms, sliced
  • 1.5L chicken style liquid stock
  • 1 large onion, chopped
  • 505.00 gm cream
  • 515.00 gm milk
  • 80.00 ml plain flour
  • 40.00 ml parsley, chopped
  • Pinch salt and pepper
Instructions:
  • In a saucepan, melt butter and gently saute mushrooms.
  • Add mushrooms, chicken stock, onion, and season with salt and pepper in the slow cooker.
  • Slow cook for 6-10 hours on low or 2.5-3 hours on high.
  • About 30 minutes before serving, increase heat to high and gently incorporate cream and milk.
  • Mix flour with a splash of milk in a separate container. Slowly pour hot soup while blending until smooth. Gradually stir mixture into the remaining soup. Simmer until thickened.
