Slow-cooked cranberry pork roast in savory sauce, perfect for any occasion.
Ingredients:
  • 1 (16 ounce) can jellied cranberry sauce
  • 0.5 cup cranberry juice
  • 0.25 cup white sugar
  • 1 teaspoon dry mustard
  • 0.25 teaspoon ground cloves
  • salt to taste
  • 1 (1 1/2-pound) boneless pork loin roast
  • 0.25 cup water, or as needed
  • 2 tablespoons cold water
  • 2 tablespoons cornstarch
Instructions:
  • Combine mashed cranberry sauce with cranberry juice, sugar, mustard, cloves, and salt in a bowl, stirring well to combine.
  • Put the pork roast in a slow cooker and pour the cranberry mixture over it. Let it cook on Low for 6 to 8 hours. Then, transfer the roast to a plate, cover it, and keep it warm.
  • Remove fat layer from cranberry sauce cooked in the slow cooker. Measure out the sauce in a 2-cup liquid measure; add water if required to fill to the 2-cup level. Transfer to a saucepan and bring to a boil.
  • Create a smooth paste by whisking together 2 tablespoons of cold water and cornstarch. Incorporate it into the cranberry sauce mixture. Cook and stir gently over medium-low heat until it thickens, which should take 5 to 10 minutes.
  • Slice the succulent pork and present it alongside the tangy cranberry sauce.
