Flavorful Latin chicken stew with tender thigh meat, spicy cumin, salsa, black beans, and sweet potatoes.
Ingredients:
  • 1 tablespoon olive oil
  • 3 pounds skinless chicken thighs
  • 0.5 cup fresh cilantro, coarsely chopped, divided
  • 2 (15.5 ounce) cans black beans, rinsed and drained
  • 2 large sweet potatoes, cut into chunks
  • 1 red bell pepper, cut into strips
  • 1 cup hot salsa
  • 0.5 cup chicken broth
  • 3 large cloves garlic, chopped
  • 2 teaspoons ground cumin
  • 0.5 teaspoon ground allspice
  • lime wedges, for garnish
Instructions:
  • In a large skillet, warm olive oil until shimmering. Season chicken generously with salt and pepper, then top with 1/4 cup of fresh cilantro. Sear chicken in the hot oil until perfectly browned on each side for 3 to 5 minutes. Transfer the chicken to the base of a slow cooker for further cooking.
  • Layer the black beans, sweet potatoes, and red bell pepper over the chicken. Combine salsa, chicken broth, 1/4 cup cilantro, garlic, cumin, and allspice in a bowl, then pour the mixture into the slow cooker.
  • Slow cook for 4 hours on Low. Serve with a decorative touch of lime wedges on top.
