Slow-cooked Puerto Rican pork roast - tender, flavorful, and effortlessly delicious.
Ingredients:
  • 4 cloves garlic
  • 1 large onion, quartered
  • 2 tablespoons chopped fresh oregano
  • 1 tablespoon ground cumin
  • 2 teaspoons ground ancho chile pepper
  • 2 teaspoons salt
  • 1 tablespoon olive oil, or as needed
  • 1 (3 pound) boneless pork loin roast
  • 1 lime, cut into wedges
Instructions:
  • Blend garlic, onion, oregano, cumin, chile pepper, salt, and pepper with vinegar and olive oil until a smooth paste forms. Spread generously over the pork loin in the slow cooker, ensuring full coverage.
  • Slow cook the pork until it is easily shredded with a fork, for 6 to 8 hours. Cut or shred the pork and serve with lime wedges for a fresh touch.
