Transform weeknight cooking with this mouthwatering Slow Cooker Ranch Pot Roast using zesty Hidden Valley® Ranch seasoning.
Ingredients:
  • 4 pounds beef chuck or round roast
  • 1-ounce (4 tablespoons) HIDDEN VALLEY® ORIGINAL RANCH® SEASONING & SALAD DRESSING MIX SHAKER
  • 1 cup low-sodium beef or chicken stock
  • 3 garlic cloves
  • 1 1/2 pounds new potatoes, halved, or quartered if on the large side
  • 5 large carrots, peeled and cut into 1-inch chunks
  • 8 ounces peeled pearl onions
  • 2 tablespoons chopped fresh parsley (for garnish)
Instructions:
  • Season the beef by placing it on a plate and generously sprinkling Hidden Valley® Original Ranch® Seasoning, Salad Dressing & Recipe Mix over it, making sure to rub the seasoning into the meat.
  • For tender pot roast, enhance flavors by using a trivet in the slow cooker for easy removal. Combine meat, stock, and garlic in the pot. Slow cook on low for 5 hours in a slow cooker or on 'slow cook' mode set to 'normal' in the instant pot.
  • Combine the potatoes, carrots, and onions in the pot, cover, and simmer for an additional 3 hours until the vegetables are tender.
  • Presentation: Take the meat out of the pot and cut it into 1/2-inch slices. Remove the garlic cloves. Arrange the slices on a platter with the vegetables or in separate shallow bowls. Drizzle some broth over the meat and vegetables and garnish with parsley.
