Slow-Cooker King Ranch Chicken

Infuse your dinner with zesty Southwestern flavors using this slow-cooked chicken recipe.
Ingredients:
  • 4 cups chopped cooked chicken
  • 1 large green bell pepper, chopped (1 1/2 cups)
  • 1 large onion, chopped (1 cup)
  • 1 can (10 3/4 oz) condensed cream of chicken soup
  • 1 can (10 3/4 oz) condensed cream of mushroom soup
  • 1 can (10 oz) diced tomatoes with green chiles, undrained
  • 1 teaspoon chili powder
  • 1 clove garlic, finely chopped
  • 12 soft corn tortillas (6 inch)
  • 2 cups shredded sharp Cheddar cheese (8 oz)
Instructions:
  • Prepare the slow cooker by coating it with cooking spray. Combine all ingredients in a large bowl, excluding the tortillas, cheese, and cilantro. Tear the tortillas into 1-inch pieces and create layers in the slow cooker: start with one-third of the tortilla pieces, then one-third of the chicken mixture, and sprinkle 2/3 cup of cheese on top. Repeat these layers two more times.
  • Cover and cook on Low heat for 3 hours and 30 minutes until bubbly with golden brown edges. Uncover and cook for an additional 30 minutes. Sprinkle with fresh cilantro before serving.
