Easy slow cooker turkey posole with hominy, black-eyed peas, perfect for chilly days.
Ingredients:
  • 0.5 cup butter
  • 2 pounds boneless, skinless turkey breast, cut into 1/2-inch pieces
  • 2 cups chopped onions
  • 0.5 tablespoon garlic, minced
  • 3 (4 ounce) cans diced green chiles
  • 2.5 teaspoons ground cumin
  • 1.5 teaspoons dried oregano
  • 0.25 tablespoon salt
  • 0.5 teaspoon cayenne pepper
  • 2 (25 ounce) containers white hominy, drained
  • 2 (14.5 ounce) cans black-eyed peas, drained
  • 2 cups chicken broth
  • 0.5 cup chopped cilantro
Instructions:
  • In a large skillet over medium heat, melt butter until sizzling. Add turkey, onions, and garlic, sautéing until turkey is cooked through and no longer pink, about 8 to 10 minutes.
  • As the turkey cooks, mix chile peppers, cumin, oregano, salt, and cayenne in a slow cooker set to Low. Add hominy and 1 can of black-eyed peas. Mash the remaining can of black-eyed peas and blend into the pot with chicken broth. Finish by stirring in sauteed turkey and onions.
  • Simmer on Low for 4 hours to meld flavors, then sprinkle with fresh cilantro before serving.
