Effortlessly transform a classic breakfast dish into a delightful dessert, ideal for hosting guests.
Ingredients:
  • 300g brioche, cut into 2cm pieces
  • 2 granny smith apples, cored, chopped
  • 235g (1 cup) walnuts, coarsely chopped
  • 5.00 gm ground cinnamon
  • 80g (1/2 cup, lightly packed) brown sugar
  • 8 eggs
  • 500ml (2 cups) milk
  • 4.40 gm vanilla extract
  • Icing sugar, to dust
  • Double cream, to serve
  • Maple syrup, to drizzle
Instructions:
  • Preheat grill to medium heat. Arrange brioche slices in a single layer on a baking tray and grill, turning occasionally, until golden brown, about 4 minutes.
  • Combine the apple, walnut, sugar, and cinnamon in a bowl, mixing well. In another bowl, whisk together the eggs, milk, and vanilla.
  • Grease a 17cm square glass or ceramic baking dish with spray oil. Layer half of the bread, followed by half of the apple mixture and half of the egg mixture. Add the remaining bread, then top with the rest of the apple mixture and egg mixture.
  • - Set up a wire trivet in a 5L slow cooker and fill with water up to the top of the trivet. - Put the baking dish on the rack and cook on low for 2 1/2-3 hours until just set. - Sprinkle with icing sugar, add a dollop of double cream, and finish with a drizzle of maple syrup before serving.
