Slow cooker pudding cake: a magical dessert with a cake base and self-made pudding topping.
Ingredients:
  • 3 medium apples, peeled, cut into 1/2-inch cubes
  • 1 1/4 cups Gold Medal™ all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup water
  • 1/3 cup molasses
  • 2 tablespoons vegetable oil
  • 1/2 cup packed brown sugar
  • 1 1/4 cups apple cider
  • 2 tablespoons butter
Instructions:
  • Coat a 3 1/2- to 4-quart slow cooker with cooking spray and arrange apples evenly at the bottom.
  • Combine flour, granulated sugar, baking soda, salt, ginger, cinnamon, and nutmeg in a medium bowl until evenly mixed. In a small bowl, whisk together water, molasses, and oil until well combined. Gently fold the wet mixture into the dry ingredients until just combined. Spread the batter over the apples in the slow cooker and sprinkle with brown sugar.
  • In a 2-cup microwavable measuring cup, combine apple cider and butter. Microwave on High for 2 to 3 minutes until butter melts and mixture boils. Pour over ingredients in the slow cooker.
  • Cover and cook on High heat setting for 2 hours and 15 minutes to 2 hours and 45 minutes, or until a toothpick inserted in the center comes out clean. Turn off the slow cooker, uncover, and let it stand for 15 minutes before serving warm.
