Transform overripe bananas into delicious slow cooker banana bread using Bisquick™ mix for a quick and easy process.
Ingredients:
  • 1 1/2 cups mashed very ripe bananas (about 4 bananas)
  • 3/4 cup sugar
  • 1/3 cup butter, melted
  • 1 teaspoon vanilla
  • 3 eggs
  • 2 2/3 cups Original Bisquick™ mix
Instructions:
  • Prepare your 4- to 4 1/2-quart round slow cooker by generously spraying it with cooking spray, lining the bottom with cooking parchment paper, and giving it another quick spray.
  • Combine ripe bananas, sugar, melted butter, fragrant vanilla, and eggs in a spacious bowl until thoroughly mixed. Gradually incorporate Bisquick™ mix until fully combined.
  • Transfer the mixture into a slow cooker and place a folded clean dish towel under the cover to prevent condensation from dripping onto the bread. Cook on High for 1 hour. Carefully remove the ceramic insert, leaving the cover on, and rotate it 180 degrees. Continue cooking on High for 1 to 1 1/2 hours until a toothpick inserted in the center comes out with moist crumbs. Place the ceramic insert on a cooling rack, uncover and let it stand for 15 minutes. Transfer the bread from the ceramic insert to the cooling rack, peel off the parchment paper, and let it cool completely for about 1 hour.
