Indulge in a savory slow-cooked turkey and vegetable feast.
Ingredients:
  • 1 cup barbecue sauce
  • 1/2 cup hot water
  • 3 turkey thighs (2 1/2 to 3 lb), skin removed
  • 3 medium potatoes, unpeeled, cut into 8 pieces each
  • 6 medium carrots, cut into 2 1/2x1/2x1/2-inch sticks
Instructions:
  • In a medium bowl, combine barbecue sauce and water. Arrange turkey, potatoes, and carrots in a 4- to 6-quart slow cooker. Pour the sauce over the ingredients.
  • Cover and simmer on Low heat for 8 to 10 hours.
  • Using a slotted spoon, transfer the turkey and vegetables from the slow cooker to a serving platter. Remove and discard the bones, then slice the turkey into serving pieces. Drizzle the cooking juices over the turkey and vegetables before serving.
