Slow-Cooker BBQ Pork Sandwiches

Tender pork roast sandwiches with savory organic tomato paste for a satisfying dinner.
Ingredients:
  • 1/4 cup packed brown sugar
  • 1 cup chopped onion (1 large)
  • 4 1/2 teaspoons Mexican seasoning
  • 3 tablespoons Worcestershire sauce
  • 3 tablespoons cider vinegar
  • 3 tablespoons molasses
  • 1 teaspoon ground mustard
  • 1 can (6 oz) Muir Glen™ organic tomato paste
  • 3/4 teaspoon pepper
  • 1 boneless pork loin roast (2 lb)
  • 8 whole wheat burger buns, split
  • Pickles, if desired
Instructions:
  • Prepare your 3 1/2-quart slow cooker with a light mist of cooking spray. Combine 3 tablespoons of brown sugar with onion, Mexican seasoning, Worcestershire sauce, vinegar, molasses, mustard, and tomato paste in the slow cooker, stirring well.
  • In a small bowl, combine the remaining 1 tablespoon of brown sugar with pepper and salt. Rub this flavorful mixture onto all sides of the pork. Cut the pork into 4 large pieces and then add them to the slow cooker, ensuring they are evenly coated with the sauce.
  • Begin by covering the dish and cooking on High heat for 1 hour. Then, lower the heat setting to Low and continue cooking for 7 hours.
  • Take out the pork from the slow cooker and place it on a plate. Use two forks to shred the pork. Put the shredded pork back into the slow cooker and mix it well with the sauce. Using a slotted spoon, place 2/3 cup of the pork mixture on each bun bottom. Add pickles on top and cover with the bun tops.
