Slow cooker version of a crowd-pleasing classic snack!
Ingredients:
  • 1/2 cup butter, cut into tablespoons
  • 1 cup packed light brown sugar
  • 1/4 cup light corn syrup
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 12 cups plain popped popcorn
  • 2 cups mini pretzel twists
  • 1 cup mixed nuts
Instructions:
  • Grease a 6-quart slow cooker with cooking spray.
  • Place butter, brown sugar, and corn syrup in the bottom of the slow cooker. Cover and cook on High for 30 minutes. Carefully remove the slow cooker's ceramic insert, leaving the cover on, and rotate 180 degrees. Continue to cook on High for another 30 minutes, or until the caramel mixture is bubbling vigorously around the edges.
  • Uncover the slow cooker and switch the heat to Low. Mix in baking soda and vanilla until fully combined; expect the mixture to foam. Add the popcorn and stir thoroughly to coat every kernel, ensuring even coverage. Cook uncovered on Low for 1 to 1.5 hours, stirring every 15-20 minutes, until the popcorn appears dry and the caramel is perfectly cooked on.
  • Spread the mixture on a sheet of waxed paper and allow it to cool for 15 minutes. Then, add in the pretzel twists and nuts. Store the snack in an airtight container at room temperature.
