Slow-Cooker Chicken Parmesan with Penne Pasta

Delight your loved ones with the comforting scent of slow-cooked chicken parmesan as they walk through the door.
Ingredients:
  • 1 egg
  • 1/3 cup Progresso™ plain bread crumbs
  • 1/3 cup shredded Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1 jar (26 oz) tomato pasta sauce
  • 1/2 cup shredded Italian cheese blend (2 oz)
  • 2 2/3 cups uncooked penne pasta (8 oz)
Instructions:
  • Coat a 2- to 3-quart slow cooker with cooking spray for easy cleanup.
  • Beat the egg until it's nice and foamy in a shallow bowl. In another shallow bowl, combine bread crumbs, Parmesan cheese, Italian seasoning, salt, and pepper. Dip the chicken in the egg, then coat it thoroughly with the bread crumb mixture. Place the coated chicken in the cooker and spread pasta sauce evenly over the top.
  • Cover the dish and simmer over low heat for 5 to 6 hours.
  • Sprinkle a generous amount of Italian cheese blend over the top of the dish. Cover and continue to cook on Low heat setting for an additional 10 minutes. In the meantime, prepare and drain the pasta according to the package instructions. Serve the chicken alongside the pasta for a delicious meal.
