Slow-Cooker German Potato Salad

Slow cooker German Potato Salad in bacon vinaigrette.
Ingredients:
  • 1/2 lb bacon, chopped
  • 1 1/4 cups chopped onions (about 3 medium)
  • 1 1/4 cups chopped celery (about 5 medium stalks)
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon celery seed
  • 1/2 teaspoon pepper
  • 2 lb small red potatoes (2 to 3 inch in diameter), cut into 1/4-inch slices
  • 1 cup Progresso™ chicken broth (from 32-oz carton)
  • 1/4 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 cup cider vinegar
  • 2 tablespoons chopped fresh parsley
Instructions:
  • In a 12-inch skillet over medium-high heat, crisp up the bacon, stirring occasionally. Once brown and crispy, remove it with a slotted spoon and let it drain on paper towels. In the same skillet, sauté the onions and celery in the delicious bacon drippings for 5 to 8 minutes until they are crisp-tender. Season with salt, celery seed, and pepper. Refrigerate the cooked bacon to use later.
  • Start by creating a delightful layer of potatoes and onions in your 3- to 4-quart slow cooker. Follow it up with another layer, then gently pour the flavorful broth over the top.
  • Simmer covered on Low heat for 5 to 6 hours.
  • Using a slotted spoon, transfer the potatoes from the cooker. Combine sugar, cornstarch, and vinegar in a small bowl, then mix into the liquid in the cooker. Add bacon and gently fold in the potatoes. Increase the heat to High, cover, and cook for 20 to 30 minutes until the potatoes thicken. Finish by sprinkling with parsley. To keep warm, set the cooker to Low heat; stir occasionally for up to 2 hours.
